Diet Thousand Island Dressing
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1 can (10-3/4 oz.) condensed tomato soup, undiluted
1/2 C. tarragon vinegar
1 medium dill pickle, cut up
1 celery stalk, cut up
6 sprigs parsley
1 clove garlic
1 T. Worcestershire sauce
1 tsp. paprika
1 tsp. prepared mustard
Dash cayenne

Put all ingredients in blender in order listed.  Cover and run on high speed until all vegetables are chopped.

Yield:2-1/2 cups, 6 calories per tablespoon.

Green Goddess Dressing
~~~~~~~~~~~~~~~~~~~~~~

1 C. mayonnaise
1/2 C. sour cream
3 T. white wine tarragon vinegar
1 T. lemon juice
1/3 C. finely chopped parsley
3 T. finely chopped onion
1 small clove garlic, finely minced
1 T. chopped chives
2 tsp. chopped capers (optional)
1/8 tsp. salt
1/8 tsp. pepper

Blend thoroughly. Cover tightly and chill in refrigerator 3 to 4 hours before use.
keep refrigerated.

Creamy Feta Dressing:
~~~~~~~~~~~~~~~~~~~~

1 garlic clove
1/3 C. mayonnaise
1/4 C. (1-oz.) crumbled feta cheese
1/3 C. sour cream
1/2 C. buttermilk
1/4 tsp. salt
1/8 tsp. pepper

Place garlic through food chute with food processor on; process until minced.
Add mayonnaise and remaining ingredients.  Process until wee blended, scraping sides of food processor bowl once.
Cover and chill at least 1 hour.
Serve with salad greens or summer tomatoes.
Yield: 8 servings

Blue Cheese Dressing # 2
~~~~~~~~~~~~~~~~~~~~

1/4 C. (1-oz.) crumbled blue cheese
1/3 C. mayonnaise
1/3 C. buttermilk
1 T. white wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. prepared horseradish
1 tsp. white Worcestershire sauce

Combine all ingredients in a bowl; stir well with a wisk.
Cover and chill at least 1 hour.
Serve with salad greens or fresh vegetables.
Yield: 9 servings.

Honey-Mustard Dressing #2
~~~~~~~~~~~~~~~~~~~~~~

3/4 C. plain yogurt
1/4 C. mayonnaise
1/4 C. honey
2 T. Dijon mustard
2 T. stone-ground mustard
1 T. cider vinegar

Combine all ingredients in a bowl; stir well with a wisk until blended.
Cover and chill.

Citrus Vinaigrette
~~~~~~~~~~~~~~~~~~

1/4 C. minced fresh basil
3/4 C. thawed orange juice concentrate
1/2 C. water
3 T. white wine vinegar
1-1/2 T. extra-virgin olive oil
1-1/2 tsp. minced fresh tarragon
1-1/2 tsp. Dijon mustard

Combine all ingredients; stir well with a whisk.
Serve with salad greens or fruit.
Yield: 12 servings.

Old Home Creamy Dill Dressing:
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1/2 C. Plain Yogurt
1/2 C. Buttermilk
1 T. sugar
1/2 tsp. dill, dried
1/8 tsp. salt

Mix all ingredients together nin a jar with a tight fitting lid; shake well.

Refrigerate before serving.

Magic French Dressing:
~~~~~~~~~~~~~~~~~~~~

1 quart salad oil
2 C. vinegar
1-1/2 T. salt
2 T. sugar
1/8 tsp. paprika
1/2 tsp. powdered dry mustard

Combine all ingredients and beat to blend.  Refrigerate in a covered container for use as needed.  Shake before using.

Yield: 1-1/2 quarts.

Italian Salad dressing:
~~~~~~~~~~~~~~~~~~~~~~

3 cloves garlic
Red Italian wine vinegar
(about 3 or 4 ounces)
About 3 pinches of sugar
about 6 pinches of salt (1/16 tsp.)
about 2 pinches of black pepper
Olive oil (for each ounce of wine vinegar add 3 or 4 ounces of oil)

Crush garlic cloves in bowl.  Add wine vinegar to absorb garlic juice.  After about 5 minutes of absorption take out garlic and throw away.  Add sugar, salt and black pepper and stir until sugar and salt are dissolved.  Add olive oil (3 to 1 ratio).  Stir and taste for your own preference.  You can more vinegar if desired.

Celery Seed Dressing
~~~~~~~~~~~~~~~~~~

This recipe is seldom seen anymore.

2/3 C. sugar
2 tsp. lemon juice
1 tsp. powdered mustard
1 tsp. salt
1/4 tsp. white pepper
1 small onion, very finely minced
1/3 C. cider vinegar
1 C. vegetable oil
1 tsp. celery seed

Place the first 6 ingredients and half the vinegar in a blender jar. Blend well.
With blender still running, add the oil and remaining vinegar and blend thoroughly. This method prevents dressing from separating.
Stir in the celery seed.

Makes 2 scant cups.

Ranch Dressing
~~~~~~~~~~~~
1/2 C. sour cream
(or yogurt, which will be tarter)
1/4 C. evaporated or whole milk
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. salt
1/8 tsp. parsley

Combine all ingredients in a small bowl, stirring until well blended.

Makes about 2/3 cup.
