Potato Salad
~~~~~~~~~~~

For Salad:
6 or 7 large potatoes, cook with jackets
3 boiled eggs
1 onion diced
A little diced celery and green pepper if you have it.

Peel potatoes and slice thin.  Peel eggs and cut.  dice onion, add celery and pepper.  
Mix dressing* (see below) and mayonnaise, pour over potatoes.  Salt and pepper to taste.

Dressing*:
Beat 3 eggs,
1/4 C. vinegar
1/4 C. sugar
1/4 C. water

Add:
1 tsp. mustard
1/2 tsp. salt

Cook over low heat until it thickens. Beat it while cooking with a wire whisk.  Remove from heat and cool.

Add:
1 C. mayonnaise
Mix well.  Pour over potato salad.

German Potato Salad
~~~~~~~~~~~~~~~~~~~

12 med. sized red potatoes
10 strips of bacon (diced, then fried; save 4 T. bacon drippings)
2/3 C. white vinegar
2/3 C. sugar
2 T. flour
1-1/3 C. water
3 tsp. salt
2 med. onions, chopped fine

Cook potatoes with jackets on; peel while warm and dice.  
dissolve water and flour together; add sugar, salt and onions to bacon grease and saute'.
Add fried bacon pieces to sauce and pour over potatoes.  
Let stand 30 minutes or longer and reheat when ready to serve.
Taste best the next day~(reheated in mircowave oven.)

Patio Potato Salad

A sweet and creamy cooked dressing lends old-fashioned goodness to this side dish that goes well with any entree.
Since the flavors need time to blend, this is a nice make-ahead salad for family picnics, potlucks and barbeques.

Patio Potato Salad:
~~~~~~~~~~~~~~~~~
1/3 C. sugar
1 T. cornstarch
1 to 1-1/2 tsp. ground mustard
1 tsp. salt
1/2 tsp. celery seed
1/2 C. milk
1/4 C. vinegar
1 egg, beaten
1/4 C. butter, cubed
1/4 C. chopped onion
1/4 C. mayonnaise
7 med. red potatoes, cubed and cooked
3 hard-boiled eggs, chopped
Lettuce leaves and paprika, optional

In a saucepan, combine sugar, cornstarch, mustard, salt and celery seed.  Stir in milk, vinegar and beaten egg until smooth.  Add butter.  Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.  Cool.
Stir in onion and mayonnaise.
In a large bowl, combine potatoes and hard-cooked eggs.  Add dressing and toss gently to coat.
Cover and refrigerate for at least 1 hour.
If desired, serve in a lettuce-lined bowl and sprinkle with paprika.

Yield:8-10 servings.

German Hot Potato Salad
~~~~~~~~~~~~~~~~~~~~~~

Joy of Cooking Cookbook
by Irma S. Rombauer and
Marion Rombauer Becker

Cook in their jackets, in a covered saucepan, until tender:
6 medium-sized waxy potatoes

Peel and slice while they are hot.

Heat in a skillet:
4 strips minced bacon~or~ 2 T. bacon drippings

Add and saute' until brown:
1/4 C. chopped onion
1/4 C. chopped celery
1 C. dill pickle

Heat to the boiling point:
1/4 C. water~or~stock
1/2 C. vinegar
1/2 tsp. sugar
1/2 tsp. salt
1/8 tsp. paprika
(1/4 tsp. dry mustard)

Pour these ingredients into the skillet.  Combine them with the potatoes and serve at once with chopped parsley or chives.

Perfect Potato Salad
~~~~~~~~~~~~~~~~~~~
2-1/2 C. cooked sliced potatoes
1 tsp. vinegar
1-1/2 tsp. salt
3/4 C. mayonnaise
1 tsp. sugar
1/2 C. chopped onion
1-1/2 tsp. celery seed
2 hard cooked eggs
1/2 C. sliced celery, optional
1/2 C. sweet pickle relish, optional

Sprinkle sugar and vinegar over potatoes, set aside.
Mix onions, seasonings, and mayonnaise, blend well, then fold in eggs.
Stir into potatoes, celery and relish may be added.  
The eggs may be placed on top instead of stirred in.

Dilly Potato Salad

1 can (2-1/4 oz.) sliced ripe olives, drained
2 tsp. prepared mustard
2 garlic cloves, minced
2 T. snipped fresh dill~or~ 2 tsp. dill weed
3/4 tsp. celery seed
1/2 tsp. salt
1/4 tsp. paprika

Place the potatoes in a saucepan and cover with water.  Cover and bring to a boil.  Reduce heat; cook for 20-30 minutes or until tender.  drain and cool.
Place potatoes in a large bowl; add eggs.

In a small bowl, combine the remaining ingredients.  Pour over potatoes and toss to coat.
Cover and refrigerate for several hours before serving.

Yield: 8 servings

1-1/2 C. minced onion, divided
3 T. salad oil
1 T. flour
2 tsp. sugar
4 tsp. salt
1/2 tsp. pepper
1/2 C. vinegar
1/2 C. water
3 pounds small whole potatoes, cooked
3 T. minced green pepper
2 T. minced parsley
1-1/2 tsp. celery seed
1 T. fresh cut dill, optional

Saute' 3/4 C. of the minced onion in oil in a skillet until tender, but not brown.
Combine flour, sugar, salt and pepper.  Stir in vinegar and water.  Add to cooked onions.
Simmer until slightly thickened, stirring constantly.
In a bowl, slice potatoes 1/4-inch thick; add remaining onion, green pepper, parsley, celery seed and dill.
Pour skillet mixture over potato mixture; toss gently to mix.  Chill.

Makes 8 servings

3/4 tsp. dried dill leaves
1/2 C. mayonnaise

Toss together potatoes, eggs, pickle and onion.  
Mix remaining ingredients, pour over potatoes, toss lightly, sprinkle with paprika and chill.

Serves 8.

Beer Dressing for Potato Salad
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
recipe from the Heileman Brewing Company,
La Crosse, Wisconsin

1/2 C. diced onions
3 T. salad oil (or bacon drippings)
2 T. flour
1-1/2 tsp. salt
1/8 tsp. pepper
2 tsp. sugar
1-1/2 C. beer
1/4 C. cider vinegar

Saute' the onions in oil for 10 minutes, stirring frequently. Blend in the flour, salt, pepper and sugar.  Gradually add the beer and vinegar, stirring constantly to the boiling point. Cook over low heat 5 minutes.  Cool slightly and pour over prepared potatoes (cooked and sliced or diced).

and Heileman's~
German Potato Salad
~~~~~~~~~~~~~~~~~~~
2 pounds boiled potatoes, peeled and sliced
1/2 pound bacon, fried and crumbled
bacon drippings
Follow recipe for Beer Dressing, but use bacon drippings in place of oil, and add crumbled bacon when mixing salad.  Serve warm.

Grilled Potato Salad
~~~~~~~~~~~~~~~~~~~

3 lbs. small red potatoes, halved
1 C. thin green beans, cut into 3-inch pieces and blanced
1/4 C. chopped fresh dill
1/2 C. crumbled feta cheese, or goat cheese

Dressing:
1/2 C. apple cider vinegar
1 T. Dijon mustard
1/4 C. finely chopped shallots
2 tsp. grated lemon peel
2/3 C. olive oil
1 T. finely chopped fresh parsley

Place potatoes in steamer basket set inside large saucepan.  Steam over boiling water until just tender, about 10 minutes.
Remove steamer basket from water.
Prepare charcoal grill or preheat gas grill to medium-high heat.  (using a vegetable grilling rack will help keep potatoes from slipping through grates.)  Brush potatoes with a little olive oil and grill until tender and tinged with brown, turning often, about 6 minutes.
Transfer potatoes to shallow serving bowl.  Add green beans, dill and cheese.

In a small bowl, whisk together vinegar, mustard, shallots and lemon peel.  Slowly whisk in oil until blended.  Stir in parsley.
Pour 3/4 C. dressing over salad and toss to coat.  Season with salt and pepper to taste.  Serve warm or at room temperature.

Hellman's Original Potato Salad
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1 C. Hellman's real mayonnaise
2 T. vinegar
1-1/2 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
4 C. cubed, cooked potatoes (5 to 6 medium)
1 C. sliced celery
1/2 C. chopped onion
2 hard-cooked eggs

Combine first 5 ingredients.
Stir in remaining ingredients.
Cover; chill.

Prize-Winning Potato Salad

For a very large crowd~
With horseradish for tang, mayonnaise and sour cream for smoothness and bacon for crunch~


16 pounds baking potatoes, peeled, cooked and cubed
32 hard-cooked eggs, chopped
2 pounds sliced bacon, cooked and crumbled
16 green onions, thinly sliced
4 C. mayonnaise
4 C. (32-oz.) sour cream
1 C. prepared horseradish
1/2 C. chopped fresh parsley
2 T. salt
2 T. pepper

Toss potatoes, eggs, bacon and onions.  combine remaining ingredients; mix until smooth.  Toss with potato mixture.
Chill several hours.

Yield: 60-70 servings
