Pot Roast

1 3-pound chuck roast
1 T. salt
1 T. pepper
1 T. fresh garlic, chopped
1 T. marjoram
5 medium potatoes, quartered
2 carrots, cut in 1-inch pieces
1 C. celery, chopped
2 C. onions, diced
1 C. dry red wine
2 C. water
4 T. melted butter
4 T. flour

Coat roast with seasonings, then brown in casserole dish with olive oil.  
Add remaining ingredients, except the water, melted butter and flour.
Remove from heat, cover with foil and bake at 275 degrees for 3 hours.
Remove roast and vegetables.   To make a sauce to serve on the side, add the water to the casserole dish, which is on medium heat on the stove, and thicken with 4 tablespoons melted butter and 4 tablespoons flour.
