Banana Nut Bars
~~~~~~~~~~~~~
1 C. butter, cubed
1/2 C. water
2 C. all-purpose flour
1-1/2 C. sugar
1/2 C. packed brown sugar
1 tsp. baking soda
2 eggs
1 C. mashed ripe bananas (about 2 medium)
1/2 C. buttermilk
1 tsp. vanilla extract
1/2 C. chopped pecans~or~walnuts

Frosting:

1 package (8-oz.) cream cheese, softened
1/2 C. butter, softened
1 tsp. vanilla extract
3-1/2 C. confectioners' sugar

In a saucepan, bring butter and water to a boil.
Remove from heat; set aside.
In a mixing bowl, combine flour, sugars, baking soda, eggs, bananas, buttermilk and vanilla. Beat until blended. Carefully add butter mixture; mix well. Stir in nuts.
Pour into a greased 15-in. x 10-in. x 1-in. baking pan.
Bake at 350*F for 18-22 minutes or until a toothpick comes out clean. Cool on a wire rack.

For frosting, in a mixing bowl, beat cream cheese and butter until light and fluffy. Beat in vanilla. Gradually add the confectioners' sugar.
Spread over bars. Store bars in the refrigerator.

Yield: 3 dozen.
