Beef Barley Soup

2 to 3 lb. chuck roast
1 (28-oz.) can whole tomatoes, crushed
1 (8-oz.) can tomato paste
1 C. water
1 C. chopped celery
1 C. chopped carrots
1 C. chopped onion
1 tsp. salt
1/2 tsp. ground black pepper
1/8 tsp. thyme
1/2 tsp. garlic powder
2 bay leaves
1/2 C. barley

Trim any fat from the chuck roast and place it in a 6 quart stock pot.
Stir together the crushed tomatoes, tomato paste, and water in stock pot.
Add the rest of the ingredients, except for the barley, and cook covered for 2 hours.
Add the barley and cook for 1/2 hour longer.
Add more water if necessary.
Remove the bay leaves and serve.

10 servings.
