Old Fashioned Baked Custard Pie

1/3 C. sugar
2 tsp. flour
1/2 tsp. salt
3 eggs
3 C. milk
1/4 tsp. nutmeg
1  9" unbaked pie shell

Combine sugar, flour, and salt with eggs and mix until smooth.

Heat milk to a boiling point. Add 1 cup hot milk to egg mixture and then pour into remaining hot milk.

Pour into unbaked pie shell. Sprinkle nutmeg over the top.

Bake at 350*F for 40-45 minutes.

Coconut Custard Pie
~~~~~~~~~~~~~~~~~

2-2/3 C. milk
1/2 C. sugar
1/2 tsp. salt
1 tsp. vanilla
4 eggs
1/2 C. grated coconut
1  9" unbaked pie shell

Combine milk, sugar, salt, and vanilla in saucepan. Heat to scalding.

Beat eggs lightly. Slowly add scalded ingredients to beaten eggs.

Pour into unbaked pie shell. Sprinkle coconut over top of filling.  Bake at 450*F for 10 minutes and then at 350*F for 15-20 minutes or until set.
